ON/II is the High Speed used for grinding all of your meat, ON/I is the Low Speed Normally used when you Stuff Sausage and REVERSE would only be used if something got caught inside the grinding head and needed to be backed out. If the grinder maxes out its wattage by something very hard being dropped down the feed chute (like a hard bone), it will immediately Stop to avoid damage. All you have to do is Unplug the grinder, take the grinding head off the unit, clear the obstructions and reattach the grinding heard to the unit. Then plug the unit back in, push the RESET button located on the Bottom of the Grinder (Not Pictured), Switch it back to ON/I or ON/II (whichever you were using) and the grinder will turn back on so you can continue grinding or stuffing. High Capacity Meat Hopper Tray – 1st Photo Above. This Grinder Now Features a High Capacity Meat Tray that can Easily hold up to 3 Lbs. This Tray is 9.75″ Long x 7.25″ Wide x 2.00 Deep. When you combine these Feature with the AVI (Advanced Variable Intake) of the Meat Auger, you can easily grind up to 225 Lbs. The Grinding Head is a Size #12 and not a Smaller Size #5 or Size #8 like most kitchen grinders. The 4 Parts of this Grinding Head are manufactured from 100% Food Grade Polished Cast Aluminum (NOT Coated). These parts of the grinder Should NOT be Washed in the Dishwasher, but should be washed with a mild detergent (li Dawn Liquid) and hot water, then towel dried immediately and stored in a dry place. Grinding Plates (Set of 3) Plus 1 Sausage Stuffing Plate – 2nd Photo Above. 3 Sizes of Tempered/Hardened Steel Grinding Plates come with this grinder for most every type of “Grind” you will ever want to do. The diameter of the grinding plates are 2-5/8 (the Standard for a Size #12 Grinder) which makes for a much faster grind due to the larger output for the meat to extrude out of while being ground. The Sizes of the extrusions holes in the grinding plates are as follows: 4 mm – 5/32″, 7 mm – 9/32″ and we have also included what is called a Wagon Wheel Plate for Larger Sausage Grinding. Also shown in the 2nd Photo Above is what is called a Sausage Stuffing Plate which is used for Stuffing Sausage ONLY. This Plate is made specially for use in electric meat grinder when you want to stuff sausage as it allows more ground meat to flow through the grinding head into the sausage casing. These Grinding Plates are manufactured from Harden/Tempered Steel and Should (like the Grinding Head) NOT be Washed in the Dishwasher. They should also (like the Grinding Head) be washed with a Mild Detergent (like Dawn Liquid) and hot water, towel dried Immediately. We then suggest you coat them with a food grade oil or a food grade silicone and then stored in a plastic bag ready for use the next time. Cutting Blades (Set of 3) – 3rd Photo Above. The 3 Cutting Blades that come with this grinder are manufactured from 304 Food Grade Stainless Steel. Since the cutting blades are manufactured from stainless steel, you can wash these in the dishwasher if you would like, but it is much easier to just wash them by hand in a mild detergent and hot water. Sausage Stuffing Tubes – 1 Photo Above. A Set of 3 Sizes of Sausage Stuffing Tubes along with the Adapter are also included with this grinder. The Diameter of the Extrusion Tubes are 3/4″, 5/8″ and 1/2. When stuffing sausage with this grinder DO NOT have the Cutting Blade in the Grinder when you are stuffing! To stuff Sausage: Insert the auger (also known as a “Snake” by some) into the grinding head, then insert the Sausage Stuffing Plate next to keep the auger centered. Next insert one of the 3 sizes of stuffing tubes into the back of the adapter and it will “snap in”. Hold these connected sausage tube parts to the front of the grinding head and secure them by placing the head locking cap over them and tightening it to the grinding head. You are now ready to stuff your sausage. Please note that the Instruction Manual that comes with this grinder explains this more in depth and also includes illustrations on how to do this correctly. Kubbe/Kibbe Attachment – 2nd Photo Above. A Kubbe (also known as a Kibbeh) Attachment comes with this grinder. For those of you who are not familiar with Kubbes, they are a Traditional Middle Eastern Dish comprised of a Cylinder like Shell made from bulghar wheat and lamb. The center of the Shell is stuffed with a spiced minced lamb filling and the ends are sealed to form the Kubbe which is the Deep Fried. Meat Pusher/Stuffer – 3rd Photo Above. We have designed a new style of Meat Pusher/Stuffer for stuffing your raw meat pieces down into the grinding head to be ground. Although this grinder will normally just pull the meat down into the grinder to be ground (if you strip the meat instead of cubing it), you can just use the palm of your hand on the top of this Meat Pusher instead gripping it with your hands and it is much less tiring that older versions of Meat Pushers. The Top of the Meat Pusher can also be Removed to store your Sausage Stuffing Tubes, or Extra Grinding Plates. Meat Claws – 1st Photo Above.
